
Preparation time: 30 minutes
Portion: suitable for 6-8 persons in a ‘Georgian-style’ sharing meal.
You will need:
- 2 cans of red kidney beans
- 1 medium white onion
- 5 cloves of garlic
- 1 handful of coriander
- 50 g walnuts
- Salt & pepper
- Sunflower oil
- Pomegranate concentrate
- Water
- Lobio spice mix or a homemade mix consisting of:
- 1.5 tsp blue fenugreek
- 1.5 tsp coriander seeds
- 0.5 tsp thyme
- 0.25 tsp cayenne pepper
Recipe:
Start by preparing your spice mix.
- Grind the walnuts and garlic cloves.
- Chop the coriander (both stems and leaves).
- Combine the walnuts, coriander, garlic, and all the spices in a bowl.
Chop the onion into small pieces and heat a generous amount of sunflower oil in a pot. When the oil is hot, add the onions with a pinch of salt and cook until soft and translucent.
Add the walnut–spice mixture and stir well.
Add a splash of pomegranate concentrate — you can adjust the amount later.
Add the canned beans along with about 150 ml of water. Stir until everything is well combined and the mixture begins to thicken. There is no need to bring it to a boil.
Season with salt and pepper to taste.
Once the mixture is heated through and has a nice, thick consistency, remove the pot from the heat.
